Charred Zucchini Hummus


Grilled zucchini adds depth of flavor and helps create a silky texture in this crowd pleasing dip!



Slice zucchini into coins. Brush each side with a little olive oil and sprinkle with salt. Place on a preheated grill or pan and grill until charred to a golden brown on each side.

Drain chickpeas and reserve the liquid from the can. Combine all remaining ingredients including grilled zucchini in a food processor or high speed blender and blend until smooth. Be patient, it takes awhile to achieve a smooth texture. If too thick or not creamy enough, add a bit of the reserved chickpea liquid. Season to taste and served garnished with more olive oil and toppings of your choice.
