We are obsessed with beets and love to use them in a variety of ways. Serve warm over polenta or pureed cauliflower. Cool and make a beet salad, or puree into your favorite hummus recipe. Save the greens! They are delicious braised or boiled and topped with olive oil and vinegar.
-2 lbs beets (scrubbed, greens removed--save them for another use!)
-2 tbsp olive oil
-1/2 tsp rosemary or cumin seeds
-sea salt to taste
-Preheat oven to 350 degrees
-Toss beets with oil, spices and salt
-Wrap in foil, place on a baking sheet and bake until tender, about 45-60 min
- Let cool slightly and rub with clean towel to remove skin
-Use immediately or cool completely and refrigerate.
